What’s green curry chicken / vegan?
The green curry chicken or Gang Keow Wan Gai (แกงเขียวหวานไก่) is one of the most famous Thai food. It is in the World’s 50 best foods list from CNN. Gang Keow Wan has mild and creamy taste with some aroma from exotic herbs, such as Thai basil. It is also less spicy than many other kinds of Thai curry, so every one can enjoy with it.
Top Secret about Green Curry
I am from Thailand, and I can tell you there is some big secret about green curry that many Thai people do not know. Can you guess what is it about? … It’s the name of Green Curry which is named after a unique green colour of this soup. Oh yeahhh, Thai people are confused about Thai language! Green curry in Thai language is Gang Kiaw WHan (แกงเขียวหวาน). many people would think it means sweet green curry, because:
Gang /kɛːŋ˧/(R) = curry
Gɛɛng kaeng
Keow /kʰia̯w˩˩˦/(R)= green
Kǐao khiao
Wan /waːn˩˩˦/(R)= sweet.
Wǎan wan
However, some Thai Food historians said the name should not be translated word by word like that. Actually Kiaw Waan (or sweet green) is an old name of a pastel green color because “waan or sweet”” sometimes means “”mild”” or “”pastel”” as well. So when you cook this kind of curry, no need to make it very sweet. The main taste should be a little bit salty and savoury from the curry paste and other ingredients.
Where is the green color of Gang Keow Wan comes from?
Green color of green curry comes from green “Prik Chi Fa” pepper and green “Thai chilli”/Big bird’s eye chilli in its curry paste. “Prik Chi Fa” means a chilli/pepper that points to the sky. This is a generic name for many kinds of Thai pepper that is less spicy than “Thai Chilli”. Cayenne pepper is a kind of “Prik Chi Fa” as well, and it is a reasonable substitute choice for “Prik Chi Fa”.
The best Green Curry Paste and where to find it
The best Green Curry Paste is fresh homemade curry paste. It always give better aroma, especially if you grind it in a mortar properly. However, it requires lotsssss of hard work and ingredients. You can see the list of Thai Green curry paste ingredients below. Unless you have a large Thai food supply nearby, buying these ingredients might make you feel like gathering items in RPG game. And your curry would not be ready in 10 mins., I can guarantee this 😀
After consider time efficiency and supply constraint, I would recommend a pre-made Thai brand curry paste for beginners. Personally, I like Mae Sri, it is vegan and the taste is so authentic. But if you would like to make it from scratch, here is the recipe for the curry paste.
Vegan Thai Kitchen Green Curry Paste Ingredients:
- 44 g. Shallot
- 18 g. Garlic
- ½ tsp. Salt
- 10 ground pepper
- 10 green Cayenne pepper
- 15 fresh green Thai chilli
- 1 tsp. Miso (Substitutes for Thai shrimp paste in original recipe)
- 6 g. lemongrass
- 6 g. galangal
- ¼ tsp. Kaffir lime skin
- 5 coriander seeds
- 2 g. coriander root
How to make Vegan Green Curry Paste
- Roast coriander seed.
- Grind all other ingredients, except coriander seed and miso, together in a mortar.
- Add the roasted coriander seed into the mortar, and grind with the mix.
- Add miso and mix everything together.

Green Curry Chicken / Vegan Ingredients (Serving 2-3):
- 1.5 cups hard tofu / chicken
- ½ cup Turkey berry (or green peas)
- 60 g. green curry paste
- ½ cup Thai basil
- Thai chilli (optional)
- 1 tbsp. oil
Green Curry Chicken / Vegan Recipe:
- Stir fry curry paste in oil until fragrant.
- Add 150 ml. coconut milk and stir until it boils.
- Add tofu / chicken.
- Add the rest of the coconut milk, wait until it boils.
- Add Turkey berry.
- After the Turkey berry is cooked, add Thai basil leaves and turn off the stove.
- Decorate with Thai chilli before you serve.
